This veggie-packed lunch option will be as popular with the adults as it is with the kids!
PREP+ COOK TIME 30 MINUTES

You will need:
200g pumpkin, chopped coarsely
olive oil cooking spray
1 1/2 teaspoons dukkah (optional)
2 wholewheat or rye bread rolls
2 tablespoons hummus
125g roast beef or cooked chicken, sliced
20g baby spinach or rocket leaves

To make the beef and pumpkin rolls
1 Preheat the oven to 220°C. Line an oven tray with baking paper.
2 Place pumpkin on a tray. Spray with oil and sprinkle with dukkah. Bake for 25 minutes or until tender; mash roughly with a fork.
3 Cut rolls in half. Spread hummus over cut sides of rolls. Divide pumpkin between roll bases. Top with beef, spinach and roll tops.
