Removing the seeds from the watermelon for these popsicles can be quite fidgety, but it’s well worth the effort. These can be made ahead of time and frozen until you need them. Serve them up as a surprise in the late afternoon at your next summer party!
Makes 8
You will need:
½ cup sugar
1 cup water
500g peeled watermelon, seeds removed
2 tablespoons lemon juice
4 tots gin (100ml)

How to make the gin popsicles
1 Combine the water and sugar in a small saucepan and simmer until the sugar has melted. Remove from the heat and set aside to cool.
2 Roughly chop the watermelon and remove all the seeds. The ready-to-use watermelon chunks should weigh about 500g. Blend the chunks and lemon juice in a food processor until puréed.
3 Press the mixture through a sieve to remove any seeds you might have missed. Combine with the sugar syrup and then add the gin, stirring well to combine.
4 Pour this mixture into individual popsicle moulds and freeze for at least six hours. Alcohol always takes longer to freeze so leaving the mixture overnight is best.
